Energy Balls with Matcha & Lemon

Who loves Heapwell Matcha? These matcha and lemon energy balls are exactly the sort of mid afternoon boost that I need. I always use the best ceremonial grade Matcha from @heapwellsuperfoods which pairs so nicely with the lemon.

Here is the full recipe:

Ingredients: 


250g cashew nuts
100g ground almonds
6 Medjoul dates
Zest of 1 lemon
1/2 tbsp @heapwellsuperfoods Matcha
2 tbsp fruit syrup
2 tbsp coconut oil, melted

Method:


Whizz the nuts and dates up in a food processor until finely ground. Add the rest of the ingredients and process again until well combined. Form into balls with your hands. They keep in a sealed container for 4-5 days.
